Kalettes® Ceasar Salad

• 200g Kalettes®
• 250g vine cherry tomatoes
• 1 cucumber
• 4 rashers bacon
• 50g grated Parmesan cheese
• lemon wedges
• 200g bread in 1cm cubes
• 3 tablespoons olive oil
• Dressing:
• 5 tablespoons mayonnaise
• 3 tablespoons fresh lemon juice
• 2 tablespoons extra virgin olive oil
• 2 anchovies, chopped finely
• salt and pepper to taste

Preheat the oven to 190° C. Arrange the bread cubes on a baking tray and sprinkle with olive oil. Bake for 15-20 minutes until crispy and golden brown. When they are done, sprinkle immediately with half of the Parmesan cheese.

In the meantime wash the Kalettes® and drain well. Slice the Kalettes® in half and blanch in boiling water (without anything added) for 3-4 minutes. Allow to cool slightly. Chop the bacon into small strips and fry in a frying pan until crispy. Halve the cherry tomatoes and slice the cucumber.

To make the dressing, mix the mayonnaise, lemon juice, extra virgin olive oil, anchovy pieces and garlic together thoroughly. Place the Kalettes®, cucumber, tomato and dressing in a large bowl and mix well. Finally, add the Parmesan cheese, croutons and bacon.
